This is one of my absolute favorite dishes because it is so fresh and fragrant. You can make the curry paste a few days in advance for a quick and easy midweek meal. Don't be deterred by the number of ingredients, it is a very simple recipe to follow. I am fortunate to live close to the most amazing Foodland that has a whole section for Asian produce. If you aren't so lucky, try an Asian grocer. If you can't find turmeric root, you can add 1/2 tsp of turmeric powder instead. Enjoy!
