I've used ambrosia, pecorino romano and provolone for this, but you could use any other cheese that you like. I chose fairly strong cheeses as the polenta on it's own doesn't have a lot of flavour - it picks up the flavour of what you add to it. Enjoy this as a side or get your vegetarian on.

A word about spatchcock....spatchcock is a term that is sometimes used to refer to a whole chicken that has been butterflied. In this recipe, I am referring to a smaller 400-500g hen.
