One at a time, dunk the vine leaves into boiling water for a few seconds to soften them. Place them with the veins facing upwards. Place a small amount of the mixture along the edge of the vine leaf and start rolling, folding in the edges like a present and continue rolling until it is tightly packed. Place in a saucepan lined with extra vine leaves. Continue until all of the vine leaf rolls are finished and pack them in tightly. Cover well with boiling water and season generously with salt. Place a plate on top of the rolls and press gently to pack them down - this will hold them down to stop them from unrolling. Simmer for around 1 hour or until the vine leaves are tender. Remove the plate and then squeeze lemon juice over the top.
Serve cold, warm or hot. Enjoy!
