I was fast running out of light tonight to style this one properly....I always use natural light for my food photography. But what sort of food blogger would I be if I didn't share a photo of tonight's paella 🥘?? It just had to be done. This was a quick and easy paella. I left out the chicken and mussels that I'd normally add. It is delicious and very easy.

Hey Jemelle....I love adding chicken and mussels when I'm cooking for lots of people. I would add the chicken thigh to the oil once you've browned your onions and garlic and brown it for a bit. As for the mussels, if you want your paella to be really authentic, simmer them in 4 cups of water. You can drain the water and use the water instead of shop bought fish stock. This gives it a really beautiful seafood flavour. Add the boiled mussels right at the end. If that's too much hard work, I would just add them when the rice becomes visible (at the same time as the prawns). PS. if you want to make larger serves, use 80g of rice per person and 2 parts fish stock/liquid to one part rice!
